Here’s a great site that lists and documents some of the fantastic art in the NYC subway. It gives listings by stations but for some reason it doesn’t mention the trains that stop there.

It does mention the trains that stop there. If you click on the name of an artwork, it brings you to a page of photos of that artwork. At the top of that page there is a link to the station containing that artwork. Click on that link and it tells you which trains stop at that station. Then consult the subway map to make sure the train stops there at the time of day and week that you want to visit.
